Farm Bed and Breakfast

Hello,
My husband and I are looking for a farm stay experience at a working farm but not for us to work there. We want to enjoy an authentic and country setting of Ireland We are planning to go to Ireland the first week in September. My husband is planning on renting a car.
Also we are interested to have a Falconry experience and a sheep herding demonstration.
We are planning on travel around South West Ireland. Dingle and Galway as a base ?

We are looking for advice here from fellow travelers for interesting sites
Sights we would like to see as well are the Gap of Dunlo historic cathedrals and castles
We are seniors and 70 years old so not interested in long hikes.
We are interested in traditional Irish music, quaint villages and the culture and the people.

If you have a base in Galway, then there is Ashford Castle for a Falconry Experience and Killary Sheep Farm for sheep herding. Quite near Ashford Castle is Cong where the classic John Wayne film 'The Quiet Man' was filmed. The Quiet Man Museum is in a replica of the cottage used in the film. There is also the ruined Cong Abbey with the small fishing station on the river with a bell the monks could ring to let the kitchen know they had caught a fish.

Alternatively there is Dingle Sheepdogs if you are based in Dingle.

You may be interested in Bunratty Castle and Folk village with recreated streerts and buildings complete with costumed actors. Rather different is Muckross House and the traditional farms in Killarney.
