Family Trip in February

Planning last minute family getaway to Ireland next month. Will have 8 days on the ground, not including arrival/departure days. Two adults traveling with 2 children, ages 8 & 11, flying in and out of Dublin. We enjoy traditional music, art, castles / ruins, beer/food, history, nature, hands on kids stuff. Will this itinerary work (very rough right now):

  • Friday - Arrive Dublin Evening (not in day count)
  • Saturday- Pick up car @ Airport: Kilkenny Castle / Dunbrody Famine Ship? / Rock of Cashel / Stay in ?
  • Sunday - Head to Dingle (suggested sights on the way?)
  • Monday - Dingle
  • Tuesday - Cliffs of Moher / Stay in Doolin? Ennis?
  • Wednesday - Bunratty Castle & Folk Park / Return to Dublin
  • Thurs, Fri, Sat - Visit Family in Dublin (not flexible)
  • Sunday - Depart early Morning

Questions:
- Is it worth going all the way to Dingle with our limited time, and the time of year? I am worried that everything will be closed due to off season.
- Suggestions for where to stay between Rock of Cashel and Dingle? Sights along the way to break this drive up? Is it worth it to head down to Kinsale / Cork / Cobh and then head up to Dingle?

Open to suggestions! Thanks in advance!
