I have enjoyed many evensong services per Rick's suggestions. It is such a fantastic way to experience the churches.
I'm looking for suggestions on cathedrals or churches (outside of Dublin) where you have enjoyed an evensong service or concert.

Suggest looking at catholicireland.net and church of Ireland websites using the term Vespers. Ireland is predominantly Roman Catholic. Evensong is from the Anglican Church.
When traveling I find perusing church bulletin boards offers insight into local events. Special recitals, ceremonies, etc.
I am pretty sure that Evensong is a form of worship in the Anglican church. The Catholic Church has a service called Vespers, but that most often occurs in a monastery. The Republic of Ireland is predominately Roman Catholic and so I rather suspect that opportunities for Evensong will be slim. In England, if you are going, there are many more opportunities.
