EES, Overnight layover in Dublin (Spain->US, US citizen)

I found an inexpensive round-trip flight from San Francisco to Barcelona with layovers in Dublin. On the return trip, the layover is long enough that I'll want to leave the airport and find accomodations. Please help me make sure I understand the situation:

SFO->DUB->BCN:
* Ireland is outside of Schengen, and I don't plan to leave airside anyway, so I will not have to deal with EES until Barcelona.

BCN->DUB, overnight, DUB->SFO
* I have plenty of time to arrive early at BCN so the question of long lines will not bother me.

My only point of uncertainty is how long it will take to get through security & customs as a US citizen when I return to Dublin airport after my overnight stay. When should I plan to arrive for a 12:50pm flight?

The Dublin Airport website suggests check in 3 hours before a long haul flight.

Ben, it is recommended that you should arrive 3 hours before your departure.

We returned from Dublin this past Sunday. The US pre-clearance did not take long at all. You do this after you drop off your bags and go through security. Then follow the signs for US Pre-Clearance. There will also be signs on the board telling you when pre-clearance opens up for your flight. If you have a long wait before your pre-clearance opens up, you can always get something to eat and/or drink. At the appointed time, you follow the signs, you go down an escalator. And then you must show your boarding pass and your passport. That's it. It wasn't complicated or time-consuming at all.

Then when we arrived at our home airport (Boston), we went directly to baggage, picked up our baggage, and headed home.
