Flight from Boston lands very early into Shannon and I’m wondering if anyone knows places in Galway where we might find an early morning breakfast. Many thanks.

How early does your flight land at Shannon? Most of the flights I saw land about 6:00 or later. It'll be between 1-2 hours before you get to Galway (depending on how you're traveling) so it won't be all that early and most places that serve breakfast will be open by then. Sorry, I don't have any specific recommendations for restaurants.

I think the idea of breakfast in Shannon is best idea. Gives you a chance to stretch your legs have a good meal and coffee and then to Galway.
