I have not been in Dublin during that period. Out of curiosity I checked whether Kilmainham Gaol tickets were available for that time. Online tickets are sold out. That suggests to me that you should book time-sensitive or restricted access sites now. For example, the Mary Gibbons tour to Newgrange. For things like Dublin Castle, the Guiness tour or Book of Kells you're fine. Any high-end restaurant should be booked. Popular restaurants around St. Stephen's Green should also be reserved. I suspect that the popular places for New Year's Eve are already booked. Also note that a number of places may be closed on the 26th (Boxing Day).
