Hi All - wanting to get your opinions about the best way to transport from Dublin airport to the city center? The posts I saw on this subject here seemed to be a few years old. Plain old taxi? Uber? Are there certain shuttle companies you'd suggest?

Guess you need to define "best way" in your particular circumstances. There's an Airlink shuttle that costs about 6 Euros that will get you at least close to where you want to go. We've used it to get back to the airport a couple of times without too much drama.
For the comfort and convenience involved, especially if you're horsing luggage around, bleary-eyed after a long overnight flight, etc. there's nothing like the door to door service of a taxi. For us it's always worth the extra 20 Euro or so.
We used the Airlink last summer as it stopped right in front of our hotel. If you go to your hotel's web site, it should give you ideas on transportation from the airport to your hotel.
There are two airport coach companies and three lines that go from Dublin Airport into the City.
Airlink offers two routes and Aircoach offers one.
All three have different stops in the city. Look at the routes and see which has a stop closest to your hotel.
I've taken Airlink a few times and find it easy and convenient.
There are also taxis. Don't know of any shuttle companies. You could check with your hotel.
I recommend a plain old taxi, especially if there are 3 or more of you. Just walk outside and get in the line for taxis. That's what we did for our group of 5, and it was quick, easy, and economical. Plus, you'll get your own private tour guide for the duration of the taxi ride.
You could fool around with Uber, or hiring a car service in advance, but a taxi will be a similar experience with no effort.
