What are my options for getting from Dublin airport to my hotel in downtown Dublin? I won't be renting a car until a few days later.

The Aircoach buses are a great option (Aircoach.ie). You’ll encounter them as you’re leaving the airport.

The cab stand is right outside the terminal - next to the bus stop. For 2 or more people after a long flight it might be easier than the bus - although there's nothing wrong with the bus, I've done both. If I remember correctly in 2019 the bus was €7.50 per person. A taxi is about €25-30 for two.

We normally spring for a taxi for the convenience of the door to door service, but the bus works fine too.
