I chose to spend the first night in Wexford as the drive from Dublin seems reasonable and we will be tired from flying all night. However, our next stop is Kenmare the following night and it seems bit far. Is there a town or spot you suggest visiting along the way to break up the journey?
Cobh would be a great stop for lunch and a little exploration. There's the Titanic Experience and the Cobh Heritage Center (Cobh was the embarkation port for most of the immigrants to America). It's a nice town with those colorful houses typical of older seaside towns. St Colman's Cathedral is interesting also.

Thomas Moore Tavern - Food is excellent. Perhaps a little more like a restaurant than a pub. Lunch or Dinner. They had live music one evening when we were there.
