We want to visit Cong and Ashford Castle just for the day and then return to Dublin that afternoon/evening. We choose not to drive. Can anyone recommend a good driving service out of Dublin?

I'm guessing that a driving service from Dublin would cost an arm and a leg.
A more cost-effective alternative would be to take the bus from Dublin to Galway https://www.buseireann.ie/ and then book a day trip to Cong and Ashford from there. The train schedule wouldn't work in this case since the tours usually begin at 9:00 AM from Galway.

Might require an early wake-up to catch the bus but would certainly save you a lot of money.
Keep in mind that, unless you're actually staying at Ashford Castle, you can't go inside. However, you can pay about 10 euros per person at the gate to walk around the grounds, which are stunning.
Also, Viator offers several day trips to Connemara from Dublin...a few include the Cong area.

We have considered taking the train to Galway and then a taxi to Cong, but that adds about 2 travel hrs...high is why I considered a tour driver directly from Dublin. I will certainly take a look at the bus option also.
I would expect it to be very expensive to take a taxi from Galway to Cong. That is not a short trip. I would go with Viator from Dublin.
