In late April, I will be driving Dublin to Ennis, and then a few days later, back. Any interesting sights along the way we should stop to view?

If you just try "Things to do" on Google Maps, you'll find lots of things, depending on your interests. If you're willing to make slight diversions from the direct route, there are scores of things I would find interesting.
Things that were much more interesting than we expected are Athlone Castle, Derryglad Folk Museum and Coole Park.
