Besides VRBO and Homeaway, we've had pretty good luck using these guys for country homes and cottages in Ireland: http://www.shamrockcottages.co.uk/. Can filter according to your requirements, dates, and desired price range.

Air BnB has started booming in Ireland, too. Lot's of glorious houses (and quaint thatched roofs!) to be discovered.

Here in Ireland many homes are also listed on DoneDeal. It's sort of like the Irish version of CraigsList.
