Driving the Sky Road is stunning. Every bend in the road is more beautiful than the last.

I agree - the Sky Road for sure.
Other possibilities as they occur to me .. in no particular order:
A day trip out to the Aran Islands from Rossaveel.
Hiking in the National Park.
Visit to the village of Cong.
Kylemore Abbey.
Maybe a detour up to the famine memorial at Doolough (google it to read about what happened there).
For something off the beaten path, take the local ferry over to the island of Inishbofin (island of the white cow) from Cleggan. Great hikes, terrific scenery.
