Quick question concerning these two castles. They seem to have rather remarkable gardens and walking areas. Is there a charge to just walk around the grounds? Also, is it possible to walk into the Ashford hotel if you're not staying there?

The grounds at Ashford Castle are open and walking will work. However, there is a wonderful opportunity there with the Ireland School of Falconry to do a Hawk Walk. This was absolutely my sister's highlight of our trip to Ireland. I didn't walk into the hotel, but I imagine their lobby would be open and perhaps their restaurant.

There is a small entrance fee (€11) for the Birr Castle grounds, but it is worth it.—- the gardens are lovely, there are lots of trails to explore, and the Science Center with the giant telescope is very interesting.
I was there 25 years ago and loved the place. I believe the entry fee was good for 24 hours, so we went in late afternoon and again the next morning. We saw the Earl, out for a walk himself, and he gave us a friendly nod.

The Ireland School of Falconry at Ashford Castle is one of the best experiences I've had in all my travels. The bonus is that you are able to walk some of the grounds. We wanted to pop in the lobby but were stopped by the "greeters" outside the castle and told we could not go in unless we were a guest. Furthermore, the grounds directly behind the castle are monitored by guards and you cannot go in to this area either unless you are a paying guest of the castle (we tried this, too, Lol!) Anywho, the Hawk Walk was amazing and a great way to see the grounds as well.
