We are looking to book a couple of tours out of Galway on Galway Tours and can find no cancellation policy on their web site and we do not seem to be able to send a request by email to ask their cancellation policy. Should we book this far in advance? We will be there the end of May. Should we wait until we get to book the tour?

Check out Viator. We have planned grat looking July tours out of Dublin and Galway. Last year we had terrific tours with them in the Netherlands and Belgium. Their website is very easy and informative, as well as very clear in stating cancellation policies. Most seem to be just a day or two cancel with 100% refund.
Viator doesn't run any tours. It is just a re-seller of other companies' tours. It is possible, though, that it makes cancellation policies more transparent on its website.
The person who runs Galway Tours is Ray Martin...he's listed on Viator's site as an expert tour guide. Here's a link:

You can contact him directly via the Viator site. That said, I do see a contact form on Galway Tours' site. Go to the contact page and move to the bottom and you should see it.
