Will be taking bus on September 3; plane arrives at 7:45 am. It looks like my two options are Dublin Coach with one transfer or JK Kavanaugh, which doesn’t leave until 10:30.
Are these the best options? Where is the bus station in the airport?

One option is to take Irish Bus (https://www.buseireann.ie/), which I have taken around 10 times.
However, I am not sure if Irish bus goes from Dublin airport directly to Kilkenny. My guess is that it doesn't. If you want to take the Irish bus, you'd probably have to go to central Dublin first and leave for Kilkenny from there. Busaras is the name of the downtown Dublin bus station. I've take several buses from there.
I have never used the two providers you mention.

There is no Bus Eireann service from Dublin- so those are your only 2 bus options, or take any of the frequent buses to Dublin Heuston station then an Irish Rail station.
Even if your flight arrives on time by the time you have been through immigration and collected baggage a significant part of the time between 0745 and 1030 will have passed. You could always have breakfast at the airport if you do have time to kill.
