There are a few specific restaurants we want to eat at while in Ireland in May. This may seem like a silly question but what is the best/easiest way to make a reservation?
It pretty much works the same as here.
Check each restaurant’s website for info on reservations. They will either have online booking, an email contact form, a phone number, or the will indicate that they don’t take reservations.
If the restaurant does not have a website, then call them.
Online, if it's available.

OpenTable does have some international choices, and TheFork.com is more common in Europe. I have used both, but not for Ireland.
Obvious advantage here is no language barrier. So, if you can’t find the place you want via on line booking, give them a call. We booked several in London this way last year, very easy.
TripAdvisor often includes a link to reserve a table. We did this in Venice.
