We are headed to Ireland in October 2018. We are coming into Dublin and heading over to Galway upon arrival.
My question: Which route has more options of things to see/do? Dublin to Galway via M4 to the M6 or Dublin to Galway via the M7 to the M6, etc...

This doesn't answer your question, but Is it set in stone that you arrive in Dublin? If you are flying, it would be a much shorter drive to fly into Shannon and drive north to Galway than to drive cross country going from Dublin to Galway, especially if you are arriving from the US. The drive to Galway from Dublin would be a long haul after an overnight flight.
From Shannon, you could detour to the Cliffs of Moher for a stop on the way, if you are inclined.
