We will be travelling in May to Kilkenny, Cork, Killarney, Galway and Dublin and would like some recommendations on where to eat authentic Irish meals (preferably seafood, but enjoy everything) in these cities.

And in Killarney, Killeen House hotel has a great restaurant called Rozzers
Had a breakfast and lunch at Riordans in Galway. It's all traditional Irish fare and delicious. My wife loved the Shepards pie.
Enjoy the pub fare almost anywhere......the FRESH daily soups served with fresh brown bread are a full, insanely good meal usually for about €5. Thick vegetable, potato and leek, carrot and parsnip and cauliflower soup were better for me than almost any so called "fine dining". .......and at home I'm not a soup person.
Have fun. The only traditional Irish food I haven't warmed up to are the black and white breakfast sausages......for me an unpleasant consistency. The breads though......OMG !!
Agree with ewewoolknit, the pub food is great! In addition to the soups mentioned, many places offer seafood chowder. Since we stay in B&Bs, we usually stop for a late, light lunch, and soup fits the bill. Our dinners are almost exclusively pub meals.
You will usually find fish fries on the menu. Salmon is plentiful, as are steamed mussels. In the Galway area we usually stay in Salthill, and can recommend Donnelly’s, a pub in Barna, which is about 6 km in the opposite direction of the city from Salthill.
In Kilkenny there are lots of places to eat but we always seem to end up at Kyteler’s Inn. They serve anything from light fare to dinners of sliced beef or lamb with mashed potatoes and gravy with fresh steamed veggies. Lots of choices!
In Kilkenny, we had an excellent meal at Campagne, which has a Michelin star. They have an "early bird" menu (which on Wednesday and Thursday is from 6 to 7 pm, and then on Friday and Saturday from 5:30 to 6:00 pm) that is 3 course for 35 euros - a steal for the caliber of food. It was a memorable meal.
Another vote for boxty house in Dublin. We also really enjoyed the food at the Brazen ahead. My daughter still says that they served the best fish and chips that she has ever had. In Galway, we really enjoyed dessert at the pie maker.
FYI, the salmon in Ireland is all farmed. Personally, I don’t eat farmed fish.
I have had some amazing quiche served w a green salad. Also amazing seafood served like a casserole w bread on the side
Just watched a TV show on Irish food and they did show fishermen catching non-farmed salmon near Cork and selling it for pretty high prices, so they must eat it somewhere around there.
The soups and seafood any where you go were always the tastiest on our trip.
