I would recommend https://dalyshouse.com/ in Doolin, also try to take in the Doolin Music House for evening music. https://www.doolinmusichouse.com/

Can't beat the Highfield House in Trim. Brosnan's in Dingle is very nice. The Albany House in Dublin is more of a hotel, with breakfast, and a little pricy but with great location near St Stephen's Green.
