Will all stores be closed on August 5 (Bank Holiday) in Galway City? We are particularly interested in shopping at smaller, independent clothing stores (incl. Aran sweater stores), book stores, and various crafts and gift shops.

Bank holidays are common (once a month or more). I expect you will hardly notice it. Office workers don't go to work but I was in Ireland during a bank holiday in May and didn't notice much of anything closed from a tourist perspective. Maybe bigger crowds at sights and more traffic on roads?
