advance booking in Ireland

We've got our first several nights of lodging in Ireland booked (late July) but we prefer to book just a day or two ahead after that.
is that a practical approach during high tourist season? Thank you!

The only danger in doing that is that you might not get your first choice. But there are literally dozens of perfectly suitable B&Bs in any given location, not all in towns. You will pass them constantly. You might get a clinker or two along the way, but it's only one night. If you are unhappy, move on the next day. You will probably want to book your last night before flying out, too, just so that you know you can be close to the airport.
