3 nights between Galway and Cork....

Our trip is late November with our family of 5 (kids all older teens), I have finalized 1 night in Dublin, then, 3 nights in Galway to visit Connemara, enjoy the Christmas Market, and perhaps a visit to Cong.
Our last night we need to stay near Cork airport, so I was thinking of staying in Kinsale for the afternoon/evening...
When we leave Galway, we were planning on seeing the Cliffs of Moher and some of the Burren. It will be my 50th birthday and I would like to spend the first night somewhere with some local character, but also open pubs with music. The second night we would head in the direction of Kinsale.
Any thoughts on the following stopover options at that time of year? Reading up on many posts, I just get more confused. I have the following on my list:
Doolin, Ennis, Ennistymon, Lisdoonvama, Corofin, Lahrich, Gort and possibly Adare for the night heading to Kinsale.
I was leaning toward Doolin but keep hearing such mixed reviews! Also, it looks like there is nothing to do if the weather stinks (aside from drinking, which I am fine with but it is sure to bore my kids if it is an all day event. LOL)
Any suggestions would be very much appreciated! I have also leaned toward Ennis but, is it too big after staying in Galway for 3 nights?
