We are connecting in Dublin on the way to Budapest, but have decided to stay in Ireland for a few days before moving on to Budapest. We are thinking perhaps 3 days (the day we arrive early in the day, then 2 more full days). If we spend one day in Dublin. What would be the best day tours for the other 2 days? Or would we be better off moving to a different part of Ireland after the first night for a night or two before heading back to Dublin for our Budapest flight on Day 4?

Dublin has plenty to see for 2 1/2 days. If it were me, I'd stay in or near Dublin, and if I wanted to see another area, I'd take a half-day trip or a day-trip from there.
You'll get better advice if you identify who "we" are, what your interests are, and what time of year you will be traveling.
I agree with the advice to just stay in Dublin and take 1-2 day trips. Popular ones are Newgrange and Glendalough, but again, it depends on what interests you. A good way to get out and see the scenery and stretch your legs is the cliff walk in Howth.
Another vote to stay in Dublin with day trips to Newgrange and Glendalough.
If you like hiking, taking the train to Howth and doing the Cliff Walk along with lunch or dinner near the pier makes for a nice day trip.
I second Howth as a day trip from Dublin. It’s a 45-min train ride. The station is surrounded by restaurants and easy access to the trails. Beautiful views and interesting trails with varying degrees of difficulty and length.
