We will also be in Ireland for the first time in May. Hitting different areas, but also heading to Cliffs of Moher. I've booked 2 nights at the Cliffs of Moher hotel in Liscannor, on the coast and close to the Cliffs. Check it out.
We really enjoyed Kilkenny and were happy staying at the Pembroke.
We are also celebrating an anniversary, 40th for us! Congratulations! From our arrival on 5/15 to our departure on 5/24 we have an ambitious plan, as I see you do also. From advice on this forum, I changed some of our plans so we did not have too many 1-night stays. I will be following other responses you get as we have a similar time-frame and interest. I can not offer advice on hotels, as we are booked in to smaller B&Bs for the most part. All of our accommodations have been confirmed, now I am in the process of sorting out activities. I have already ruled out so many things as I do not want to be so over-planned that we have no time to "take a road less traveled" if we see one. Some of our goals: Irish music/dance, castles, walk on a beach, learn more about the history of the Irish, particularly the ancient history, ferry trip to the nearest Aran island, hiking in the beautiful landscape, etc. I will be interested in what more well-traveled folks advise! We are also from Virginia!
Happy travels!
Rebecca
I have to catch a plane to Leeds from Dublin in the morning on the 24th. I considered getting a place close to the airport but decided the bus from Dublin is really the most convenient airport transportation - so am staying downtown (convenient to the bus) the night before.
