I have the Iceland guidebook and maybe I missed this but are most things open on Sunday (like grocery stores, museums, gas stations)?

Yes, most everything is open on Sunday. Grocery stores always have limited hours though, like not opening until 10pm and closing at 5 or 6, so pay attention to that.
