We are trying to travel during less busy times to avoid crowds, but we also want to spend a lot of time hiking. I know many of the “destination” hikes are not open until June. Thoughts?

For hiking, yes May is early. There are some areas that you can, but it will be a wait and see thing. That said, Iceland has so much to offer that even if you can't hike you won't be bored by any means. We have another trip on the books for May, FWIW.
The later, the better.
