I'm flying to Iceland on IcelandAir on economy class and was wondering if they have plugins. It's a 7 hour flight and I'd like to use my CPAP.

It depends what route and what type of aircraft is used on that route. Check on seatguru dot com for your specific flights.
It's possible that there may not be electricity outlets in Economy but you could inquire about upgrading, for example to Comfort Economy if those seats have the outlets.
