2 of us are planning a 7 night Ring Road driving trip in mid June 2025. We don't plan on any hikes or many side trips. Our first night would be north of Bogarnes. Then, instead of 1 night stops, we are thinking of 3 nights in Akureyri, with a day trip to Husavik one day and then a day trip to Lake Myvatn area sites another day. We would pass Myvatn again on our way to Seydisfjordur for an overnight. Then, a long day's drive to Fagurholsmyri near the glaciers on the South side. Then back to Reykjavik the next day. Comments? Wondering if we should add another day on the south side.
I would not recommend this. Even if you stayed in different places each night , 7 days is way too short for the ring road, in my experience. With just 7 days you could do Snaefellsness and the south coast up to Hofn and that would still be packed days.
Agree with mikliz, who has been to Iceland many times. We did a 12-day Ring Road trip with a mixture of one and two night stays, and it was a comfortable pace. You will be driving past many beautiful sites without having any time to stop. With 7 nights you should concentrate on the Golden Circle, South Coast as far as Höfn, and Snaefellsnes Peninsula.
