Booking tickets ahead of time?

Hello! We will be in Iceland early July, and I was wondering how far in advance we need to book tours and museums? We already have our Blue Lagoon, but I guess I'm thinking more of the following:
ATV tour to plane wreck near Vik? (and this worth it?)
Perlan
Horse riding near Reykjavik (Laxnes and there's another farm right across the road)
Other things like Lava experience, Ice bar, etc
I've heard whale watching and such should wait until we know the weather. True?

My hunch is telling me the ATV tour may need a reservation soon, the rest can wait?

Do you have any other suggestions for a fun tour? We will have our own transportation. We are a party of 6, ages 52-78. So, some walking, limited in hiking. I'd like a smaller glacier experience, not the really popular one by Diamond Beach (we won't be able to go that far). Something we can walk up to and touch, not able to do a glacier walk.
