Do you have a recommendations for places to see outside of Budapest? We enjoy National Parks, gardens, easy hikes or bike rides. We have 4-5 days to explore part of Hungary.

Lake Balaton is great for bike riding and hiking. It’s just sixty miles from Budapest.
All of this is sort of date dependent for the weather. If you have 3 or 4 full days to see the city, then the extra days can be spent outside the city. Remember it’s a large city so if hiking is what you want, stay off the public transportation. All the city landscape between the points of interest is interesting and fascinating so walking is always good; and yes, you can rent bikes in the city and there are bike paths on most of the major roads.
For the places outside of town most you can get to by train or bus, but if you wanted more efficient use of time, I know a good transfer service. But $$$ compared to the bus or train.
With your mention of nature and bikes in mind here are some ideas outside of the center.
Sure, Balaton for water sports and the beach, but it does depend on the time of the year. The nearest point is about 55 miles and the furthest about 110 miles. You are going to spend 1 to 4 hours each way depending on where you go and how you get there (car or train). Locals run down to the close beaches as a day trip but they can be crowded because of that. The further ones work better for overnights. It’s a huge lake and you can’t just show up, you need a plan. The most interesting town/village on the lake in my mind is Tihany (but it’s also among the hardest to reach and accommodations are limited): https://youtu.be/1OSDWhPJoCQ?si=ykiqzAhll3QYnIPK For beach time I liked Siófoki Nagystrand (my only beach visit that i did with a large group last year) which is an easy trip. Since my experience is somewhat limited maybe Kenko or someone else here has posted a trip report on another beach or town on the lake. The lake can be crowded on summer weekends and holidays. Here is a list of National Parks with locations and information. This might be a better call for you. The only one I have experience with is Bukki and it was worth the day trip there. But again, a long day trip.
A lot less intense but beautiful I have been told (haven’t done it yet) is Lillafüred https://youtu.be/pj4EyxKu6vc?si=6po7tDlRv77brTap I think it would make a pretty special overnight trip.
