Perhaps chicken paprikash (probably not spelled right)? Roast chicken? I think at least some restaurants will have lake fish.

What about lamb?

Duck is on most every menu in Budapest, as is chicken. Carp soup is a national dish and thanks to a trout farm, trout is on a lot of menus. He won't have any trouble eating. But if you don't have an issue with pork, I suggest you try Mangalica pork. It is pretty amazing.

We have eaten duck in both Prague and Budapest and rabbit in Budapest. Also, chicken and fish is widely available.
