Carp Soup

Some time back, someone asked for a place to try the local specialty. Well, I wasn't much help. Where I come from carp is a trash fish, and in 20 years of travel here, i have been unable to make myself try it.

Today, I visited a new place for me, and fish was their specialty. I ordered an appetizer I knew I would like and would fill me if the carp was what I expected.

The soup came. Red paprika fish broth with substantial chunks of carp .... bones and all. Carp has a rather off putting thick fleshy, fatty, skin. Yum? The broth was fishy tasting as he!!.

Fortunately, this is an authentic place, and on the table is a jar of Pista, Hungarian hot paprika paste. A big popping spoonfull went in. Then, a good dark beer that i thought was sure to subdue any taste it mixes with.

Carefully minding the bones I scraped fish from the thick fatty skin and began working my way to the bottom of the bowl, being mindful of the bones.

About halfway to the bottom of the bowl I realized, this is good stuff. Having eaten enough local home cooking I knew the skin, the chunks, and the bones made it authentic.

Unfortunately, one of the bones made it past the chew inspection and became lodged in my throat. Large quantities of beer and the bread that came with the meal forced it to where I could no longer feel it.

So, if you want to try the local speciality, look no further. This place is outstanding. Oh, and the service was also amazing. Thses are the Hungarians I enjoy. You can't go wrong here, if not the carp, the duck or pork or duck liver floating in its own fat .... yum!

After, like me, walk across the street to Palack Wine Bar (Palack borbár) and sit back, enjoy the view of the Gellert Hotel and the Liberty Bridge with a nice local wine; and again, excellent service from a kind staff.

A Polish former colleague of mine would buy a live carp (here in London somewhere) for Christmas dinner every year. They'd keep it in the bathtub until it was time for the chop.

Isn't it interesting that the carp which is detested in the US, is the exact same fish - European carp brought into the US and now an invasive species here. Growing up, we had neighbors with carp in their bathtubs for Christmas too. Christmas Eve dinner was supposed to be meatless, so fish was standard. Thankfully, my parents hated it. I remember being told a good recipe for carp was to put it on a cedar plank, bake it for an hour, then throw the fish away and eat the plank.

I always thought it was because valuing "trash fish" like that was a sign that ancestors were really hungry. So...

They learned through a lot of time how to make them the best they could be.

Apparently carp are like swine, reproduce fast, grow fast and eat almost anything so they are a good large scale source of protein. One man's trash is another man's gold.

While I would eat it if served at someone’s house, this isn’t making me add it to my list of things to try on purpose…..

On the other hand, as I sample the various New Zealand wines with dinner, I sometimes (not every time) think of Palack.

What are your feelings about menudo?

I think I could be convinced to try carp soup before menudo.

But i grew up with menudo .... it can be "okay" or really ..... you know. But carp? But it was good. I might try a few more places so I am a better judge.

Had the halaszle (carp soup) in Budapest on my visit, was absolutely delicious!

My favorite never-going-to-try was in the episode Anthony Bourdain made of his worst moments in the show. He said he gave up "going with the flow" of what the producers wanted him to do when he ended up eating Warthog anus in one of the Bush episodes in Africa.
