Best airline and itinerary for travel to Athens in mid December-avoiding weather related delays? We are planning to depart from LAX or Sky harbor in AZ meeting a cruise.

Not sure if there is a best, weather can happen anywhere. As an example, I usually have to fly through Minneapolis or Atlanta (Delta), common sense might say fly through Atlanta in the winter, however, they know how to deal with snow and ice in Minneapolis, a little ice and snow shuts ATL down for the duration.
My advice is to choose the best cost option that gets you there in the fewest stops. I do generally avoid the big airports as transit in the New York area if I can, no good reasoning, just me. I would also plan on being in your cruise departure city a few days early, just in case.

I would suggest choosing a flight where the connection is in Europe rather than the U.S. If your first leg is delayed, you will have more options in a European city to continue on to Athens.
