In Athens, the weather will be cool (mid 50s) but mostly dry, you can go to all the major sights in Athens, Peloponnese, and North. The further inland you go, the colder it will be.
The islands will be a mix of active, to almost shut down. Naxos, Crete, and other larger islands will be active, but still, some tourist spots shuttered.
Crowds should be less, maybe use caution from New Years to Epiphany (Jan 6), it will essentially be a long holiday weekend, with closures.
It’s winter . Greece is not a year round tropical destination.
Might be good for hiking ( as long as it’s not rainy it’s nicer to hike when it’s not hot out )
