I've read that during this time many of the businesses on the Greek Islands will be closed. What can I expect during those travel dates. I know that Orthodox Easter is April 20, 2025.
I was in both Crete and Santorini around Orthodox Easter of 2022.
Some shops were closed on Easter Sunday but during the rest of the weekend, things were hopping. Restaurants and coffee houses were very busy. Other times, it was business as usual.
On Easter Sunday morning, I took the ferry from Heraklion to Santorini and it was empty.

Agree that Greek life will return to normal after Easter Sunday.
My plan is to go April 20-29, 2025.
Businesses may be closed on Easter Sunday but most everything will be open other days.
People think that Greece shuts down during off season but that's not the case.
Regardless of where or when you go they'll always be shops, markets and tavernas open for locals which may give you a more "Greek" experience than a tourist one.
I travel off season most late Sept/early Oct and for the first time late April 2023.
Everywhere I went businesses were open and ready to serve not only locals but what ever there were for tourists.
I can talk about other Greek places, but especially Santorini will not be very lively even on Easter Sunday. However, even on Easter Sunday, there are some local customs that are funny or even a bit scary, like shooting or burning Judas in the main square of some villages.
