Hi, we are flying from Athens to Chania airport on September 23rd and are scheduled to land at 1855. I'm am considering booking welcome pickups to take us to our hotel. How much time should I allow to get luggage etc. I was thinking of booking a 1945 pickup is this realistic or should I allow more time?

I would give it more time. Better you wait a bit then miss them.
We booked Welcome Pickups for a pickup at Orly. Our flight was delayed one hour, we texted them to let them know. They cancelled us out and didn’t send another driver. And they only gave us a credit, no refund.
Read the fine print.
Since that experience we either book a pickup through booking.com or just take a taxi at the stand.

There will be many taxis waiting at the airport ready to take you to Chania. Just walk out the door and you will find lots of taxis. On our last few trips we just took the KTEL bus which is waiting for every flight with connections to Chania.
