Are there any recommended day tours associated with the Jewish sites and history of Thessaloniki?
Sorry, I don’t know any tours.
At a tangent to your question though, if you want an easy read about the multicultural history of Thessaloniki I’d recommend’The Thread’ by Victoria Hislop

Alan
As another "tangent," Alan Furst, author of novels about pre-war and WW II underground and espionage, wrote a fascinating novel "Spies of the Balkans" set in Salonika (as Thessaloniki was known) from 1938 onward... it involves a Greek police deputy who fnds himself involved in the passage of fleeing Jewish Greeks through the city to safety, or not. Atmospheric, suspenseful re-creation of the times and the milieu.
Janet - thanks for that. I’d been racking my brains for the title or author of the Furst novel. I really liked it as well.
Alan, yes, Furst wrote about 6 or 7 really good suspense novels about the period between 1938 - 44 in Europe of WW II, the foreboding, the invasions, the lilfe under occupation etc. "Spies of the Balkans" was the last good one .... then he moved to the US, to the fawncy Long Island resort area of "the Hamptons" and every book since then is sleazy trash. Avoid.
Janet - thanks. I’ll look out the early ones and avoid the later!
We visited the Jewish Museum in Thessaloniki and found it very interesting - see https://inthessaloniki.com/item/jewish-museum-of-thessaloniki/. You. might want to contact the museum directly - they might be able to recommend a guide.
PS I checked and "Get Your Guide" (which we have used elsewhere and found d very good) does offer a Jewish Heritage private tour.
