We're visiting GREECE from US soon, and plan to stay for only 15 days. Will we need Schengen VISAs or any type of "quasi VISA" docs to enter Greece?

That depends on your nationality.
If your citizenship allows you visa free travel to the Schengen area then right now there is nothing you need to do except make certain that your passport is not about to expire.

No Visa is needed for a US passport holder. You can stay up to 90 days, so you are covered. You may have heard about ETIAS in the news, and warnings on outdated articles and websites, about needing a "Visa" for travel. But that is not a visa, just additional information, and a confirmation approval for travel, but it is not yet in effect, nor likely will be this year.
