We are looking at hotels in Santorini for May 2025, and are seeing a large number do not even have bookings open yet (they aren’t sold out, the sites say things like “call to book”). Is there a time when these open up? We are specifically looking at Imerovigli.

There is no 'official' date when bookings are available. It will differ from hotel to hotel. If you have a specific hotel in mind it's up to you keep checking their website until you get a confirmation.

There's no standard, it just depends on the property. Some might open bookings 12/9/6/3 months out, or just whenever they get around to it. Some might not open bookings for next year until they close for the season, or they might wait until after the new year. Booking.com shows a bunch of hotels in Imerovigli that are taking reservations for next May.
We stayed at Absolute Bliss last year and loved it. Great breakfast, excellent service & staff, and the view was impeccable
