After using the search function looking for and finding few posts, are the 3 airlines connecting ATH with Crete consistently all on time? SkyExpress is less expensive than the other 2, which gives me pause. Thank you in advance!

These three airlines are perfectly reliable. Olympic is the former Greek national airline which was acquired by Aegean.
Aegean is ranked every year among the best European airlines.
You can buy tickets for an Olympic flight on the Aegean website and vice versa.
Sky Express is a younger but also reliable airline.
Having flown many times on these 3 airlines, I see almost no difference in terms of quality and service although my preference is for Aegean.
All three fly with Airbus A320 (neo or not) or ATR72 turboprop.
Note that you might also find ATH-HER flights with Volotea, a Spanish lowcost airline which has codeshare agreements with Aegean on this route but which I do not recommend.

Aegean airlines was great for travel between islands. Their app was very user friendly.
