Northern and Southern Greece - guidance for 2 week trip Nikkita and Paros?

Hello! We are flying into Thessaloniki on the eve of 6.19 to go to a wedding in Halkidiki and have 4 days before we head to our villa on Nikita for 5 nights. Thinking 2 nights in Thessalonki (get over jet lag) and rent a car and spend 2 nights somewhere on the way to Nikita area? Any suggestions? First time in Greece so everything will be new and exciting for us! Open to small towns, cool spots, coast etc.

Starting 6.22 we will be Nikita for 5 nights. All suggestions for that area welcome! After wedding we want to tour southern greece before heading to Athens on 7.2 for flight home. Is 5 nights too short to go to islands? We wouldn't be on any island much before 3pm on Monday 6.27 due to travel. We are considering Pollonia Milos first 2 nights and then ferry to Paros (Naousa area) for 3 nights and fly to Athens in evening of 7.2 and stay at airport hotel for our early morning flight back to states. Is this too much? Will the islands just be crazy packed? Should we stay 5 nights at one -or other suggestions of islands? We picked paros/milos as potentially less crowded but maybe being naïve! We have to fly from Thessaloniki to Athens so we have options. We can rent a car/ATV and have a decent budget - once in a lifetime trip so want to see as much of Greece as we can.

We are active couple in mid 50s, love to walk or bike when we can and like to stay in an area we can walk to cafes/sites near the coast. Nearby but not in the center so we can explore areas, have a drink, see the sites. We do like the beach but not spend a whole day on a sunbed (maybe 1/2 day after a day trip) as well as maybe rent boat or take a boat trip. We know Paros can be touristy but we like the idea of the diversity of things to do and wonder if Milos too small for 5 nights if we are not wanting to spend our days at the beach. Any and all advice welcome. We haven't booked anything but our villa yet!
