Itinerary Feedback Please

Hi,
We are a family of 4 (children 14 & 21) traveling to Greece late May-early June. Hotels, flights, and ferry are all booked. So, our timeline is set.

Looking for some feedback on our itinerary as it currently stands and whether we are missing anything:

Santorini (3 nights)
Day 1 - Arrival 5pm Santorini. Get to hotel (Fira), walk around to get acclimated, have dinner, early night.
Day 2 - (4 cruise ships in port) Cab to Pyrgos in the morning (8am) and explore until about noon. Take cab to hotel to get swimwear and things for sunset cruise, cab to Amoudi Bay for lunch and board for private Pirate Fishing Tour with Capt. Makis (thinking my husband and son will enjoy the fishing)
Day 3 - (2 cruise ships in port) Fira to Oia Beach Hike (start 8-9am). Explore Oia and have lunch then perhaps Akrotiri but open to do other things (any suggestions?)
Day 4 - (5 cruise ships in port) Depart for port about 1:30pm, travel via SeaJet to Heraklion (depart 3pm). (Any suggestions on how to spend the morning before heading to the port?)
Heraklion (2 nights)
Arrival in Heraklion 5pm. Get to rental (Old Town), walk around to get acclimated, shopping, have dinner in Old Town.
Day 5 - bus to Knossos (about 10am), then back to Old Town for lunch then Archaeological Museum.
Day 6 - Rent car, checkout of accommodations, drive to Chania, stopping in Rethymon on the way.
Chania (5 nights)
Check in to rental, walk around to get acclimated, have dinner
Day 7 - Explore Old Town. I used Chatgpt to curate a self-guided walking tour in Chania with historical references and background information for each stop. So, we could do that this day. (open to other ideas)
Day 8 - Take boat tour to Balos Beach and Gramvousa
Days 9- - Could be a day for a cooking class and exploring villages (any recommendations?)
Day 10 - Falasarna Beach and villages , hiking (any other ideas or recommendations?)
Day 11 - Checkout of rental, return car, fly to Athens (departing 9am)
Athens (2 nights)
Arrive 10:30, drop bags at hotel in Plaka. Explore Plaka, possible food tour
Day 12 - Acropolis, National Archaeological Museum, Lycabettus Hill for sunset
Day 13 - return home

We are looking to book some fun activities (food tours, cooking class, ebike tours, etc) but not sure which cities would be best for those.

If you can, I would switch your cruise on Santorini to day 3 from day 2. You will be in Oia from your hike. The day we did this hike, we went swimming (young adults went cliff jumping) from Amoudi Bay. No reason to go to Oia twice.

Then on day 2 go from Pyrgos to Akrotori. We went to Akrotori first and then tried to park in Pyrgos with no success and then went up to the monastery above it instead. So a taxi is probably not a bad idea.

This itinerary would be more efficient.

Heraklion- Day 5. The bus from Knossos goes right by the museum. I would visit the museum before lunch. When we were there, there was a nice cafe in the museum. We did not know what we would find and had brought our own food for a picnic in the gardens.

And on day 8 in Chania, a day trip to Balos beach and Gramvousa is a full day. I would not schedule anything else.
