Planning trip to Greece in summer, 2022.
Are all of the points of interest open, & if so, are they closing early?
What about the restaurants? Normal hours or early closing?

From posts here, it looks like Greece has been having a fairly normal tourist season this summer. I would not worry about such things now for next summer--a lot can change! I am planning on trying to visit next May, but I will evaluate the situation next spring.
I would suggest looking into travel insurance policies for now, but no point in investigating anything else except reading about beautiful Greece.
Yes, I confirm that besides the mandatory of wearing masks indoors, everything operates as usual in Greece.
Greece is open and fabulous!! We spent the month of September between the mainland and Crete and cannot recommend going too highly!! The Greek people Arte delighted to welcome visitors, the major (and many minor) museums are open, the open-air sites are open and there are no crowds. Hotels and restaurants readily available.
We traveled (by rental car) from the Athens airport-Cape Sounio (Hotel Aegeon, nice beach hotel, to recover from jet lag) - to Galaxidi/Delfi (Hotel Europa, outside Galaxidi - basic hotel with a great pool, easy access to the coast and Delfi (we decided against staying in Galixidi because it was difficult to park) - to Olympia (wonderful Hotel Europa, outside town, where they serve dinner in the Garden - to Napflio (Perivoli Country Hotel - too far out of town, top winding roads and overly expensive dinners - not recommended) and back to Athens to fly to Crete (Heraklion and Chania) . No problem getting in, with vaccination card, and back home, with a test from the hospital in Chania.
Driving was easy, despite Rick's cautions - and we had a wonderful time. GO!!!
Of course, no one knows what the situation will be next summer.
Greece is definitely open right now. A friend is in Athens as I type this. Things appear to be pretty normal--he just had his pocket picked!!!

Otherwise, realize you'll likely have to flex on a variety of things, so decide if you want to stay home or travel with the wildcard of Covid. Good luck!
