Immersive experiences: Athens, Santorini, Crete, Istanbul

We are planning a multi-week adventure in spring 2025, and I am starting to feel overwhelmed by all the resources to read and options available. We're very experienced travelers who have successfully planned detailed itineraries around the world for short and long trips. For this adventure, the volume of options and research resources feels much more daunting. Hoping those with first-hand experience can share your strong recommendations.

I'm specifically looking for tips on immersive experiences in Athens, Santorini, Crete, and Istanbul for two adults. We have multiple days to play with in each destination. Hoping to identify a tour, tasting, class, activity, adventure, etc. that allows us to be social, learn something, engage with locals, and experience authentic local culture, as we make memories. Preferably off the beaten path, rather than a well-worn touristy activity. Something that goes deeper than a surface-level experience. Could be a couple hours or a full day. Help me narrow down the options!

I don't really understand what you're looking for but I think that during your research you missed that Santorini with its almost 4 million visitors per year on a few dozen square kilometers is one of the most touristic places in Europe (and even in the world).

So you risk being very disappointed if you are looking for an immersive experience there.

And although Crete is big enough to find some places off the beaten track, you have almost no chance of finding them by landing there for the first time and only for a few days.

If you are looking for something that goes deeper than a "surface-level experience", it's easy, forget all the organized tours, tasting or whatever, learn a little Greek and go on your own in contact with people.
