Hi Everyone!! I am going to be booking a trip to Greece in September from the US and this is what I have put together with my research, just want to get any opinions or advices, especially on the hotels!

September 8th Fly out of boston
Sept 9th Land in Athens 8:55pm
Sept 9th Fly into Santorini on 11pm flight
Stay at Absolute Bliss from Sept 9th to Sept 13th
Sept 13th ferry to Paros
Sept 13th-17th Stay at Yada suites
Sept 17th Ferry to Athens
Sept 17th-21 Stay at Attalos hotel in Athens
Sept 21st Fly home

We might rent a car or buggy in Paros but do not want to rent any in Santorini or Athens, so hoping we are choosing places near public transport!

In Paros I assume you mean Yades Suite (in Naoussa)
I don't know this hotel, but I know Paros quite well. Naoussa is not my favorite place.
The hotel is located a little outside the touristy area near the port with its restaurants, bars and luxury shops.
Which is pretty good in my opinion. (more quiet)
Piperi beach is not far away. The beaches of Naoussa are not the best in Paros (and facing the north wind) but at least you won't have to go far to go swimming.
If you like sweets and good bread, near the hotel there is an excellent pastry-bakery "Chamēlothōrēs" here:

Paros has a good bus service but a rental car is still preferable if you want to visit the island without the constraints of bus times and destinations.

In Athens, the Attalos hotel is relatively well located, a few minutes walk from the Acropolis, the Agora, etc.

You will also be very close to the Municipal Market which should not be missed. It's in the same street as your hotel, 150 meters further north (go there in the morning). If you want to eat real Greek cuisine you can have lunch there. There are small taverns serving dishes made with fresh produce from the market.

and "Aris Tavern"

Not far from your hotel is the restaurant (for meat lovers)

There are few tables and it is advisable to book.

Sorry, I never stay in hotels in Greece, on the other hand as you can see, I go to restaurants a lot... :))

All of this is great. Hotel Attalos is a great choice, it's the best time of year, you're leaving from Athens. Paros-to-Athens ferry hopefully goes well.

Four nights in Athens is a lot, though, of course, with a city that size there is plenty to do. If you like, you could possibly arrange to rent a car and fit in a quick side-trip to Nafplio or Delphi. I always try to end my Greece trips by returning my rental car to the airport because the office is directly outside the terminal.
