I would not try to island hop, but mainland Greece would be a good place to go anytime. I'd go to Athens and/or Thessaloniki.
What do you expect to do and where do you want to visit? If Athens, weather should be mild which would be good for visiting ruins and lots of museums on days when weather might not be so good. If looking for beach time, then it’s not good. Crete is as far south in Greece as you can go so could be warmer but also it’s a time of year when storms can be expected. It’s definitely the time of year for cities or larger towns.
