Is it recommended that I book ferry service between Athens, Mykonos, Santorini and Paros now (early February) or is it safe to book it when I’m there April 25 - May 8. Not sure about demand at that time

You can safely book ferries as you go at that time of the year. They won't be anywhere near full.

Note that traditionally there are no ferries on May 1st.
So don't plan a ferry ride that day.
