Can anyone tell me about walking in these sites. So many walking tours describe the terrain as challenging or demanding. It’s beginning to cause me to worry about the accessibility of these places. We are a senior couple with plenty of travel experience and have not had issues before.

Delphi was not demanding. I haven't been to Meteora. Ephesus is in Turkey. It was not particularly challenging. There's almost no shade at Delphi or Ephesus, so if it's hot, that might be a problem.

For Ephesus it was recommended to us to get our transportation to drop us off at the entrance at the top (South Gate) and then walk down to exit at the bottom (North Gate).

At the monasteries at Meteora, there is walking on cobblestone stairs, some uneven surfaces, some uphill/downhill slopes. We did not go into all of them and some may be more challenging than others. There are tons of taxis/local tours that go to to the monasteries and can be arranged when you are there. The local tourist office could probably direct you away from ones that might be more difficult. We just went into one of the monasteries and we were completely happy with that. They are absolutely amazing just seeing them from the town.

I have visited all of these places. Some parts of them may have steep steps up or down or incline areas as you go up and around the sites.
If you are fine doing that type of activity perhaps elsewhere (Acropolis or other ancient sites) you should be fine. But only you can decide.

Delphi is set on a mountain side. There is a incline UP throughout the site to get to the higher elevations of the ruins. But if I remember the site is paved with cment or stone with very little earthen pathways. It's a " hike" but doable for able bodied older visitors like us.
