Why wouldn't you use the plan you already have in France?
There are no roaming fees in Europe.
To answer the question of why: we have t-mobile and found that in many countries the service is quite slow , meaning that even loading a location on a mapping program is painful. However, in Greece the service is excellent! As fast as wifi for our needs. So no e-sim needed here.
@Mary- you said you used Nomad eSIM data and number except they only have data plans and do not have number plans. Technically when using an eSIM it’s best to use WhatsApp, which is used in Europe much differently than how Americans use it, it functions similar to a phone number but it really isn’t.
Airalo does have a Global plan eSIM that has both a phone number and data, if you really need to be able to receive calls from European numbers. https://www.airalo.com/global-esim
